From late Spring to early Summer, you may come across the large, silky white flowers of Tawari.
In olden days these flowers were used by the Maori to decorate festive occasions and were strung into garlands to be worn around their necks. They were one of the few flowers given a special name to highlight their aesthetic value: "Whakou". Today the Tawari tree is rare in the wild- an large tree with widespreading evergreen branches.
When you taste the mild frothy white honey of the Tawari you are enjoying a unique taste of primeval bush. Songbirds have fed on the nectar since the beginning of time. "Tawari Honey is the sweetness of their song"
Tawari forms a canopy tree 6 to 16m high which smoothers itself in creamy-white flowers during November and December. On the tree the flowers appear white but on close inspection they are distinctly yellowish and 2.5-4cm across.
Tawari grows in the lowland and subalpine forests from North Auckland to southwards to Rotorua and Lake Waikaremoana. 500g jars |
